The best way to read a knock sensor is an oscilloscope.

Direct connexion between the sensor and the scope input with a piece of coaxial lead.

The scope is very sensitive and with practice you can detect very low level of knock.

i was thinking of data logging the knock sensor it would need a Knock Sensor Interface so yourdyno can read it as a gauge input 0 to 5 volts

It's very difficult to calibrate a Knock sensor since each engine has different frequency so when you test one car and your sensor thinks car is knocking, with other cars will not.  There are some Knock detector sensors like TunerNerd or Phormula or Plex for example you can add to yourdyno then it will works good since these hardware you can calibrate in its own software like tunernerd.
