What 5v temp sensor is everyone using for coolant temp thanks

You would be better using the thermocouple ThC on the bluebox and a K type sensor which you pick up cheap.

Another option is you can get K-type sensor to 0-5v converter.
Theres a $10 one on ebay that iv used (pt100 transmitter 0-150c 0-5v) or if your wanting to use up to 8 sensors you can use ECUMaster EGT to CAN and the CANTool plugin to add 8X 0-1250C gauges.
